  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  2. In a large mixing bowl, cream together the butter and brown sugar. Add the egg and vanilla extract, and mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  4. Stir in the quick oats and chocolate chips until evenly distributed.
  5. Press half of the oat mixture into the bottom of the prepared baking pan. Pour the caramel sauce over the oat layer, spreading it evenly. Crumble the remaining oat mixture over the caramel layer.
  6. Bake for 25 minutes, or until golden brown. Allow to cool in the pan for 1 hour before cutting into bars.
  7. Serve and enjoy!
