Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
-
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
-
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
-
Add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
-
Stir in the hot water until the batter is smooth.
-
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.
-
In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the chopped chocolate. Let it sit for 1 minute, then whisk until smooth.
-
Place one cake layer on a serving plate and spread a layer of chocolate ganache on top. Place the second cake layer on top and spread the remaining ganache over the top and sides of the cake.
-
Dust the cake with powdered sugar and garnish with fresh berries.
-
Allow the cake to set for at least 1 hour before serving.
