Peel and grate the beetroot.

In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate bowl, whisk together the eggs, sugar, oil, and vanilla extract.

Add the grated beetroot to the wet ingredients and mix well.
