  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
  5. Stir in the chopped almonds.
  6. Divide the dough in half. Add red food coloring to one half and mix until the color is evenly distributed.
  7. Roll out the plain dough and red dough separately to a thickness of about 1/4 inch.
  8. Cut out shapes using cookie cutters.
  9. Place the cookies on a baking sheet and bake for 8-10 minutes, or until lightly golden.
