  2. Place the corn on the grill or in the oven and cook for about 10-15 minutes, turning occasionally, until the kernels are slightly charred.
  3. Remove the corn from the grill or oven and let it cool for a few minutes.
  4. Cut the kernels off the cob and transfer them to a mixing bowl.
  5. Add the cheddar cheese, green chilies, cayenne pepper, salt, and black pepper to the bowl with the corn. Mix well to combine.
  6. Transfer the mixture to a baking dish and bake in the oven at 350°F (175°C) for about 10 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with cilantro.
