Anzac biscuits are named after the Australian and New Zealand Army Corps (ANZAC) soldiers who ate them during World War I. The biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients did not spoil easily and the biscuits stayed fresh during transportation.

  1. Preheat oven to 160°C (320°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine rolled oats, desiccated coconut, plain flour, and brown sugar.
  3. In a small saucepan, melt butter and golden syrup over low heat.
  4. In a separate small bowl, dissolve baking soda in boiling water.
  5. Add the melted butter mixture and baking soda mixture to the dry ingredients. Mix well.
  6. Roll tablespoonfuls of the mixture into balls and place onto the prepared baking tray.
  7. Flatten the balls slightly with a fork.
  8. Bake for 12-15 minutes or until golden brown.
  9. Remove from the oven and let cool on the baking tray for 5 minutes.
  10. Transfer to a wire rack to cool completely.
