  2. Cut a small 'X' on the flat side of each chestnut. Place them on a baking sheet and roast for 20 minutes. Remove from the oven and let cool. Peel the chestnuts and chop them.
  3. In a large skillet, melt the butter over medium heat. Add the leeks, celery, and onion. Sauté until softened, about 5 minutes.
  4. Add the chopped apples, thyme, and sage. Cook for another 5 minutes.
  5. In a large mixing bowl, combine the sautéed mixture with the bread crumbs, chopped chestnuts, vegetable broth, salt, and pepper. Mix well.
  6. Transfer the stuffing mixture to a greased baking dish. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
