  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients.
  5. Drop rounded tablespoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the tops spring back when lightly touched. Allow to cool completely.
  7. In a small bowl, beat together the cherry pie filling, powdered sugar, and heavy cream until well combined.
  8. Spread a generous amount of the cherry filling on the flat side of half of the cookies. Top with the remaining cookies, flat side down.
  9. Serve and enjoy!
