  1. Preheat the oven to 180°C (350°F).
  2. Thaw the puff pastry sheets according to package instructions.
  3. In a bowl, mix the cherries, sugar, breadcrumbs, butter, cinnamon, and vanilla extract.
  4. Roll out one puff pastry sheet on a floured surface.
  5. Spread the cherry mixture evenly over the pastry sheet, leaving a border around the edges.
  6. Roll up the pastry sheet tightly, starting from one of the long sides.
  7. Place the cherry strudel on a baking sheet lined with parchment paper.
  8. Brush the strudel with beaten egg.
  9. Repeat steps 4-8 with the second puff pastry sheet.
  10. Bake the cherry strudels for 35 minutes or until golden brown.
  11. Remove from the oven and let them rest for 15 minutes.
  12. Serve warm and enjoy!
