Cherry and Cream Scones

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the fresh cherries.

Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.

Use a sharp knife to cut the circle into 8 wedges. Transfer the scones to the prepared baking sheet.

Bake for 15-18 minutes, or until the scones are golden brown.

Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
