Cherry Almond Shortbread Cookies

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the almond flour, all-purpose flour, and vanilla extract to the bowl. Mix until well combined.

Gently fold in the pitted and halved cherries.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Flatten each ball slightly with the back of a fork and sprinkle sliced almonds on top.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
