  1. In a bowl, mix shredded cabbage, julienned carrots, and chopped green onions.
  2. Place a spring roll wrapper on a clean surface.
  3. Add a spoonful of the vegetable mixture onto the wrapper.
  4. Place a slice of cheese on top of the vegetables.
  5. Fold the sides of the wrapper towards the center, then roll tightly.
  6. Seal the edge with a bit of water.
  7. Repeat with the remaining wrappers and filling.
  8. Heat oil in a pan for frying.
  9. Fry the spring rolls until golden brown.
  10. Remove from the pan and drain excess oil on a paper towel.
  11. Serve hot with soy sauce for dipping.
