In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and melted butter. Mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean cloth, and let it rise for 1 hour, or until doubled in size.

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Punch down the dough and divide it into 4 equal pieces. Roll each piece into a rope and shape it into a pretzel.

In a large pot, bring 10 cups of water to a boil. Add baking soda and stir until dissolved.

Boil each pretzel in the water for 30 seconds, then transfer to the prepared baking sheet.

Sprinkle each pretzel with shredded cheddar cheese and coarse salt.

Bake for 12-15 minutes, or until golden brown.
