Scalloped potatoes, also known as potatoes au gratin, originated in France and were traditionally made with Gruyère cheese.

Preheat the oven to 375°F (190°C).

Peel and thinly slice the potatoes.

In a saucepan, melt the butter over medium heat. Stir in the flour, garlic powder, salt, and black pepper until well combined.

Gradually whisk in the milk and cook until the mixture thickens.

Remove the saucepan from heat and stir in 1 cup of shredded cheddar cheese until melted.

In a greased baking dish, layer half of the sliced potatoes. Pour half of the cheese sauce over the potatoes.

Repeat the layering with the remaining potatoes and cheese sauce.

Cover the baking dish with foil and bake for 45 minutes.

Remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.

Bake for an additional 15 minutes or until the cheese is melted and bubbly.

Let the scalloped potatoes rest for 10 minutes before serving.
