In a medium saucepan, bring water and salt to a boil. Gradually whisk in grits and reduce heat to low. Cook for 20 minutes, stirring occasionally.

In a separate pan, melt butter over medium heat. Add garlic and cook until fragrant. Add corn kernels and kale, and sauté until kale is wilted.

Once the grits are cooked, stir in cheddar cheese, milk, and black pepper. Cook for an additional 5 minutes, until the cheese is melted and the mixture is creamy.

Serve the cheesy grits in bowls and top with the corn and kale mixture. Enjoy!
