Preheat the oven to 375°F (190°C).

In a large bowl, combine zucchini, bell peppers, red onion, corn kernels, black beans, chipotle peppers, garlic, olive oil, salt, and black pepper. Toss until well coated.

Transfer the vegetable mixture to a baking dish.

Sprinkle cheddar cheese and Monterey Jack cheese over the top.

Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it rest for 5 minutes.
