  2. Wash and chop the beet greens.
  3. In a saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute.
  4. Stir in the flour and cook for 2 minutes, stirring constantly.
  5. Gradually whisk in the milk and cook until thickened.
  6. Remove from heat and stir in the cheddar cheese, parmesan cheese, nutmeg, salt, and black pepper.
  7. In a baking dish, layer half of the beet greens. Pour half of the cheese sauce over the greens.
  8. Repeat with the remaining beet greens and cheese sauce.
  9. Bake for 25-30 minutes, or until the top is golden and bubbly.
  10. Let it rest for 10 minutes before serving.
