Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Add the sweetened condensed milk, evaporated milk, eggs, and vanilla extract to the bowl. Mix until well combined.
  4. In a small saucepan, heat the granulated sugar and water over medium heat until the sugar has dissolved and the mixture becomes caramel-like.
  5. Pour the caramel into a 9-inch round baking dish, spreading it evenly across the bottom.
  6. Pour the cream cheese mixture over the caramel in the baking dish.
  7. Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the baking dish.
  8. Carefully transfer the pans to the preheated oven and bake for 50-60 minutes, or until the center of the flan is set.
  9. Remove the pans from the oven and let the flan cool in the water bath for 10 minutes.
  10. Remove the baking dish from the water bath and let the flan cool to room temperature.
  11. Once cooled, refrigerate the flan for at least 2 hours, or overnight, to allow it to set.
  12. To serve, run a knife around the edges of the baking dish to loosen the flan. Invert the dish onto a serving plate, allowing the caramel to drizzle over the top of the flan.
  13. Slice and serve chilled.
