Preheat the grill.

Butter one side of each bread slice.

Place a slice of cheddar cheese on the unbuttered side of 4 bread slices.

Top with the remaining bread slices, buttered side up.

Grill the sandwiches for 3-4 minutes on each side, until golden brown and the cheese is melted.

In a large saucepan, melt the butter over medium heat.

Add the chopped onion and minced garlic, and cook until softened.

Stir in the flour and cook for 1 minute.

Gradually whisk in the milk until smooth.

Add the canned tomatoes (including the juice), basil leaves, salt, and black pepper.

Bring the soup to a simmer and cook for 15-20 minutes.

Use an immersion blender or transfer the soup to a blender and blend until smooth.
