  5. Gradually add the milk, stirring continuously until the sauce thickens.
  6. Stir in the grated cheddar cheese, dried thyme, salt, and black pepper.
  7. Add the cooked potatoes to the cheese sauce and mix well.
  8. Roll out the shortcrust pastry and line a pie dish with it.
  9. Pour the cheese and potato mixture into the pie dish, spreading it evenly.
  10. Cover the pie with another layer of pastry and seal the edges.
  11. Make a few small cuts in the pastry to allow steam to escape.
  12. Bake in the preheated oven for 40-45 minutes, or until the pastry is golden.
