Cheese and Herb Damper
Damper is a traditional Australian bread that was historically made by stockmen and drovers over campfires.

Preheat the oven to 180°C (350°F).

In a large bowl, combine the self-rising flour, grated cheddar cheese, and chopped fresh herbs.

Make a well in the center of the dry ingredients and pour in the melted butter and milk.

Mix everything together until a soft dough forms.

Turn the dough out onto a floured surface and knead gently for a minute.

Shape the dough into a round loaf and place it on a baking tray lined with parchment paper.

Use a sharp knife to score the top of the loaf in a cross pattern.

Bake in the preheated oven for about 30 minutes or until the damper is golden brown and sounds hollow when tapped on the bottom.

Remove from the oven and let it rest for 10 minutes before serving.
