Celery is actually a member of the parsley family and has been cultivated for centuries for its medicinal properties.

  1. Preheat the oven to 375°F (190°C).
  2. Trim and chop the celery stalks.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the chopped celery, diced onion, and minced garlic to the skillet. Cook until the vegetables are tender.
  5. Sprinkle the flour over the vegetables and stir well.
  6. Slowly pour in the milk, stirring constantly to prevent lumps.
  7. Continue cooking until the mixture thickens.
  8. Stir in the cheddar cheese and remove from heat.
  9. In a greased casserole dish, spread half of the celery mixture.
  10. Sprinkle half of the bread crumbs, salt, black pepper, paprika, and parsley.
  11. Repeat the layers with the remaining celery mixture and toppings.
  12. Bake for 30 minutes until the casserole is golden and bubbly.
  13. Let it rest for 10 minutes before serving.
