  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter, sugar, and honey over medium heat. Stir in the flour and cream until well combined.
  3. Remove from heat and stir in the almond slices.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart. Flatten each spoonful with the back of a spoon.
  5. Bake for 10-12 minutes or until golden brown.
  6. Allow the florentines to cool completely on the baking sheet.
  7. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring between each interval until smooth.
  8. Dip the bottom of each cooled florentine into the melted chocolate and place them back on the parchment paper.
  9. Let the chocolate set for about 30 minutes before serving.
