In a large pot, melt butter over medium heat. Add chopped onion and garlic, sauté until translucent.

Add cauliflower florets and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes or until cauliflower is tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in milk, cheddar cheese, salt, and black pepper. Cook over low heat until the cheese is melted and the soup is heated through.
