Carrot Orange Muffins
Carrots are a great source of vitamin A, while oranges are rich in vitamin C. These muffins combine the goodness of both ingredients in a tasty and nutritious treat.

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, combine the grated carrots, orange juice, flour, baking powder, salt, cinnamon, nutmeg, sugar, vegetable oil, eggs, and vanilla extract. Stir well until all the ingredients are combined.

Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
