  1. Preheat the oven to 180°C (350°F).
  2. Grate the carrots and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  4. In another bowl, beat the eggs. Add the vegetable oil and vanilla extract, and mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Fold in the grated carrots.
  7. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let the muffins cool in the tin for 5 minutes.
  10. Transfer the muffins to a wire rack and let them cool completely.
