Grate the carrots and set aside.

In a large bowl, beat the eggs and sugar until well combined.

Add the grated carrots, flour, melted butter, vanilla extract, cinnamon, salt, raisins, and nuts (if using) to the bowl. Mix until all ingredients are evenly incorporated.

Grease a baking dish and pour the carrot mixture into it.

Smooth the top with a spatula and bake in the preheated oven for about 60 minutes, or until the kugel is set and golden brown.
