Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the all-purpose flour, powdered sugar, ground cardamom, and salt.

Add the unsalted butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Add the egg yolks and mix until the dough comes together.

Divide the dough into 6 equal portions and press each portion into a tartlet pan.

Bake the tartlet shells for 12-15 minutes, or until golden brown.

In a small saucepan, heat the honey and heavy cream over medium heat until it starts to simmer.

Remove the tartlet shells from the oven and let them cool for a few minutes.

Pour the honey and cream mixture into each tartlet shell.

Sprinkle chopped pistachios on top.

Let the tartlets cool and set for about 10 minutes before serving.
