  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the all-purpose flour, powdered sugar, ground cardamom, and salt.
  3. Add the unsalted butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. Add the egg yolks and mix until the dough comes together.
  5. Divide the dough into 6 equal portions and press each portion into a tartlet pan.
  6. Bake the tartlet shells for 12-15 minutes, or until golden brown.
  7. In a small saucepan, heat the honey and heavy cream over medium heat until it starts to simmer.
  8. Remove the tartlet shells from the oven and let them cool for a few minutes.
  9. Pour the honey and cream mixture into each tartlet shell.
  10. Sprinkle chopped pistachios on top.
  11. Let the tartlets cool and set for about 10 minutes before serving.
