  2. Peel and slice the sweet potatoes into thin rounds.
  3. Slice the onions into thin strips.
  4. Heat olive oil in a pan over medium heat and add the onions. Cook until caramelized, about 15-20 minutes.
  5. Roll out the pie crust and place it in a tart pan.
  6. Layer the caramelized onions on the bottom of the tart crust.
  7. Arrange the sweet potato slices on top of the onions.
  8. In a bowl, whisk together the eggs, heavy cream, salt, pepper, and fresh thyme.
  9. Pour the egg mixture over the sweet potatoes.
  10. Sprinkle grated Gruyere cheese on top.
  11. Bake in the preheated oven for 35-40 minutes, or until the tart is golden brown and set.
