Heat olive oil in a pan over medium heat. Add sliced onions and cook until caramelized.

Peel and thinly slice the potatoes.

In a mixing bowl, whisk together eggs, milk, salt, and black pepper.

Grease a baking dish and layer half of the caramelized onions at the bottom.

Arrange a layer of sliced potatoes on top of the onions.

Pour half of the egg mixture over the potatoes.

Repeat the layers with the remaining onions, potatoes, and egg mixture.

Sprinkle grated Parmesan cheese on top.
