Preheat the oven to 200°C (400°F).

Peel, core, and slice the apples.

In a pan, melt the butter over medium heat.

Add the brown sugar, cinnamon, and vanilla extract to the pan. Stir until the sugar has dissolved.

Add the sliced apples to the pan and cook for about 5 minutes, until they are slightly softened.

Roll out the puff pastry sheets and cut them into squares.

Place a spoonful of the caramelized apples onto each puff pastry square.

Fold the edges of the puff pastry over the apples to create a pocket.

Transfer the puff pastry pockets onto a baking sheet.
