Preheat the oven to 350°F (175°C).

Core and slice the apples.

In a skillet, melt 2 tablespoons of butter over medium heat. Add the apples, granulated sugar, and cinnamon. Cook until the apples are tender and caramelized, about 10 minutes.

In a separate bowl, mix the all-purpose flour, brown sugar, rolled oats, chopped pecans, salt, and vanilla extract. Cut in the remaining butter until the mixture resembles coarse crumbs.

Spread the caramelized apples in a baking dish. Sprinkle the crumb mixture evenly over the apples.

Bake for 20-25 minutes, or until the topping is golden brown.
