  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, flour, instant coffee granules, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely on a wire rack.
  7. Refrigerate for at least 2 hours or overnight.
  8. Before serving, garnish with whipped cream, cocoa powder, and chocolate-covered coffee beans.
