Peel and chop the potatoes.

In a pot, heat the olive oil and sauté the chopped onion and minced garlic until golden.

Add the potatoes and water to the pot. Bring to a boil and cook until the potatoes are soft.

While the potatoes are cooking, wash and chop the kale into thin strips.

Once the potatoes are cooked, use a blender or immersion blender to puree the soup until smooth.

Return the soup to the heat and add the chopped kale. Cook for an additional 5 minutes.

Season with salt and black pepper to taste.

Let the soup rest for a few minutes before serving.
