  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring water to a boil and blanch the cabbage leaves for 2-3 minutes. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the brown rice, tomato sauce, vegetable broth, dried thyme, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Place a cabbage leaf on a flat surface and spoon about 1/4 cup of the rice mixture onto the center of the leaf. Roll the leaf, tucking in the sides, and place it seam-side down in a baking dish. Repeat with the remaining cabbage leaves and rice mixture.
  6. Pour any remaining tomato sauce over the cabbage rolls and sprinkle with Parmesan cheese.
  7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cabbage rolls are tender and the cheese is golden.
  8. Let the cabbage casserole rest for 10 minutes before serving. Enjoy!
