  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.
  2. Add butternut squash, white beans, vegetable broth, cumin, cinnamon, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until squash is tender.
  3. Use an immersion blender or transfer soup to a blender, and blend until smooth.
  4. Return soup to the pot and heat over low heat for 5 minutes.
  5. Serve hot, garnished with fresh parsley.
