Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise, remove the seeds, and peel off the skin. Cut it into cubes.

Toss the butternut squash cubes with olive oil, salt, and black pepper. Place them on a baking sheet and roast for 30-35 minutes, or until tender.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant.

Add the spinach to the skillet and cook until wilted, about 3-4 minutes.

Remove the skillet from heat and crumble the blue cheese over the wilted spinach.

Once the butternut squash is roasted, add it to the skillet and gently stir to combine.
