  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the butternut squash.
  3. In a large pot of boiling water, cook the matzo sheets until al dente. Drain and set aside.
  4. In a skillet, heat olive oil and sauté the onion and garlic until translucent.
  5. Add the diced butternut squash and cook until tender.
  6. In a bowl, mix together the ricotta cheese, spinach, egg, salt, black pepper, and dried oregano.
  7. In a baking dish, layer the ingredients: tomato sauce, matzo sheets, butternut squash mixture, ricotta mixture, mozzarella cheese, and parmesan cheese. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
