Butternut Squash Mac & Cheese
Butternut squash is a good source of fiber and contains high levels of vitamin A and potassium.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 375°F (190°C).

Cut the butternut squash in half lengthwise, scoop out the seeds, and place it cut side down on a baking sheet. Bake for about 40 minutes or until the squash is soft.

While the squash is baking, cook the macaroni according to the package instructions until al dente. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Stir in the flour, garlic powder, onion powder, salt, and pepper until well combined. Cook for 1-2 minutes.

Slowly whisk in the milk, making sure there are no lumps. Cook over medium heat, stirring constantly until the mixture thickens.

Scoop out the cooked butternut squash flesh and add it to the saucepan. Use a handheld blender or mash with a fork to blend until smooth.

Add the cheddar cheese to the saucepan and stir until melted and well combined.

Add the cooked macaroni to the saucepan and stir until all the macaroni is coated with the cheese sauce.

Transfer the mixture to a baking dish and sprinkle with breadcrumbs.

Bake for about 20 minutes or until the top is golden and crispy.

Let it rest for 10 minutes before serving. Garnish with chopped parsley.
