Grate the butternut squash and onion using a box grater or food processor.

Place the grated squash and onion in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, beat the egg and then add the grated squash, onion, flour, salt, and black pepper. Mix well.

Heat the vegetable oil in a large skillet over medium heat.

Drop spoonfuls of the squash mixture into the hot oil and flatten with the back of a spoon to form latkes.

Cook for 3-4 minutes on each side, until golden brown and crispy.
