  1. Grate the butternut squash and onion using a box grater or food processor.
  2. Place the grated squash and onion in a clean kitchen towel and squeeze out any excess moisture.
  3. In a large bowl, beat the egg and then add the grated squash, onion, flour, salt, and black pepper. Mix well.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the squash mixture into the hot oil and flatten with the back of a spoon to form latkes.
  6. Cook for 3-4 minutes on each side, until golden brown and crispy.
  7. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve the butternut squash latkes hot with sour cream or applesauce, if desired.
