Butternut Squash and Pecan Casserole
Butternut squash is a good source of fiber, vitamins A and C, and potassium.

Preheat the oven to 375°F (190°C).

Peel and cube the butternut squash.

In a large skillet, heat olive oil over medium heat.

Add the onion and garlic, and sauté until softened.

Add the cubed butternut squash, thyme, salt, and black pepper. Cook for 5 minutes.

Pour in the vegetable broth and bring to a simmer.

Transfer the mixture to a casserole dish.

In a small bowl, mix together the pecans and breadcrumbs. Sprinkle the mixture over the butternut squash.

Bake in the preheated oven for 30-35 minutes, until the top is golden brown.

Let it rest for 10 minutes before serving.
