In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until the dough comes together.

Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.

Once the cookies are cooled, spread a teaspoon of dulce de leche on the bottom of one cookie and sandwich it with another cookie.
