Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the buckwheat flour, all-purpose flour, and a pinch of salt. Cut the butter into small pieces and add it to the flour mixture. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.

In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the flour mixture and stir until well combined.
