Grate the potatoes and onion.

Squeeze out excess moisture from the grated potatoes and onion.

In a large bowl, mix together the grated potatoes, onion, eggs, flour, salt, and black pepper.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the potato mixture into the hot oil and flatten with a spatula.

Cook for about 4-5 minutes on each side until golden brown and crispy.

Remove the latkes from the pan and drain on paper towels.

Serve hot with sour cream or applesauce.
