  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, granulated sugar, and salt.
  3. In a small saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and smells nutty, about 5 minutes. Remove from heat and let cool slightly.
  4. In a separate bowl, whisk together the egg yolks and vanilla extract. Gradually whisk in the browned butter.
  5. Pour the butter mixture into the flour mixture and stir until just combined.
  6. Press the dough into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
  7. In a large bowl, toss the sliced apples with the brown sugar, cinnamon, and lemon juice.
  8. Arrange the apple slices in an overlapping pattern on top of the tart dough.
  9. Bake for 35-40 minutes, or until the apples are tender and the crust is golden brown.
  10. In a small saucepan, heat the apricot jam over low heat until melted. Brush the melted jam over the top of the tart.
  11. Allow the tart to cool for at least 30 minutes before serving. Serve warm or at room temperature.
