Financiers are small French almond cakes that were originally created by nuns in the Middle Ages. They were named ‘financiers’ because they were often sold by the pastry chefs who worked in the financial district of Paris.
This is vegetarian recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 180°C (350°F) and grease a financier mold.

In a small saucepan, melt the butter over medium heat. Continue cooking until the butter turns golden brown and gives off a nutty aroma. Remove from heat and let it cool slightly.

In a mixing bowl, combine the almond flour, powdered sugar, all-purpose flour, coconut flakes, and salt.

In a separate bowl, whisk the egg whites until frothy. Gradually add the dry ingredients to the egg whites, mixing until well combined.

Slowly pour the brown butter into the batter, stirring continuously until fully incorporated.

Pour the batter into the greased mold, filling each cavity about 2/3 full.

Bake for 15-20 minutes or until the financiers are golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let the financiers cool in the mold for 10 minutes. Then transfer them to a wire rack to cool completely.
