Broccoli and Cheese Topped Potatoes

Preheat the oven to 400°F (200°C).

Scrub and pierce the potatoes with a fork. Place them on a baking sheet and bake for 45-50 minutes or until tender.

In the meantime, steam the broccoli until crisp-tender.

Once the potatoes are done, remove them from the oven and let them cool slightly.

Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.

Mash the potato flesh with butter, salt, and black pepper.

Fill each potato shell with the mashed potato mixture.

Top each potato with steamed broccoli and grated cheddar cheese.

Return the potatoes to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Remove from the oven and let them rest for 5 minutes before serving.
