Cook quinoa according to package instructions.

Preheat grill or oven to medium-high heat.

Slice bell peppers and red onion into strips.

In a large bowl, combine cooked quinoa, bell peppers, red onion, cherry tomatoes, cucumber, feta cheese, kalamata olives, fresh parsley, lemon juice, olive oil, salt, and black pepper.

Toss everything together until well combined.

Grill or roast the mixture for 10-15 minutes, until the vegetables are tender and slightly charred.
