  1. Preheat the oven to 180°C (350°F).
  2. Melt the butter, golden syrup, and brown sugar in a saucepan over low heat.
  3. Remove from heat and stir in the flour and ginger until well combined.
  4. Drop teaspoonfuls of the mixture onto a lined baking tray, leaving enough space for spreading.
  5. Bake for 8-10 minutes or until golden brown.
  6. Remove from the oven and let cool for a few seconds.
  7. While still warm, carefully roll each snap around the handle of a wooden spoon to form a tube shape.
  8. Let the snaps cool completely on a wire rack.
  9. Fill each snap with whipped cream and drizzle with brandy.
  10. Serve and enjoy!
