Boreks are a popular street food in Turkey and can be found in various shapes and fillings. They are often enjoyed with a cup of Turkish tea.

Preheat the oven to 180°C (350°F).

In a bowl, mix crumbled feta cheese, chopped spinach, olive oil, salt, and black pepper.

Lay one sheet of phyllo dough on a flat surface and brush it with a mixture of egg and milk.

Place a spoonful of the feta cheese mixture on one end of the phyllo dough sheet.

Fold the sides of the sheet inward and roll it up tightly.

Repeat the process with the remaining phyllo dough sheets and filling.

Place the rolled boreks on a baking sheet and brush the tops with the egg and milk mixture.

Bake in the preheated oven for 20 minutes or until golden brown.

Allow the boreks to rest for 10 minutes before serving.
